Eggplant Lasagne

Sort of PSMF friendly! Zucchini subs well for eggplant too.

Peel and slice a very large eggplant into strips. Cook on a grill.

Make your favourite spaghetti sauce (eg. sauté some lean beef, lots of onion, fresh basil and oregano, garlic, chopped mushrooms, a chopped red pepper, and 1/2 jar of tomato paste, salt/pepper to taste, and simmer until a thick sauce.)

Layer in a baking dish: eggplant, sauce, fat free ricotta/cottage cheese, and shredded low fat cheese.

Bake until cheese has browned a bit.
