The only thing missing from that gluten-free cake would be a nice whisky sauce and it would have all my fave things in it =P~

Mind you, the incline-DBs are none too shabby either...guess you could stand-in for the power-mixer when the electric prices go up!

I make a decent Chocolate almond cake that has whiskey in it as one of the ingredients  ha ha ha No picture... maybe take one next time.

When I was doing my apprenticeship ... Being young and silly as you do :naughty: ha ha ha ... One of my "punishment" was to fold big blocks of pastry with a rolling pin instead of our trusted (electronic) sheeter... :pale: I had to do it a few hours a day. First thing I did after work is hit the bed for a few hours of afternoon sleep... Probably never slept so deep since than. :pfft:

Put some size on the shoulders and forearms tho

Thank you for the compliments.

Not sure if I'm ready to share secrets ha ha ha :snooty: but I would like to help ..... So let me tell you this:

You can make some nice caramel out of sweetened condense milk.

Assuming you cook or bake the condensed milk till it caramelizes?

If its hard after cooking and once it cooled down to room temperature you probably "treated" it with heat for too long.

The longer you expose it to heat the harder the end product will be.

I don't use a candy thermometer, but if you have one you want to take it up to about 120 degrees celsius... it should do the trick.

One handy way to test it I found, is to have a cake tin bottom in the fridge and when I think the caramel getting close to the firmness or color I desire, I drop few drops of it onto the cold tin and it makes it settle in a matter of a few seconds ... Than just press on it with the fingers and see if its firm enough. This cuts done on guess work and time...

Up to this part it would be still your average so so caramel and one little trick I found that makes it more palatable and easy to work with is once its cools done to a bit over blood temperature to fold in some

unsalted butter. Somewhere between 25-50 % of the weight of the caramel. ( Up to your preference...) Let it cool done to room temperature and than beat it with an electric mixer until fluffy and full of air. Voila a caramel that is soft to work with ( but still firms up enough in the fridge to hold its shape...), reasonably light and the butter will reduce the sweetness effect...

Recap:

*Treat it with heat but be on cautious side ( a little less is better than a little to much) butter will firm it up in the fridge anyways.

*At a bit over blood temperature, work your (softened, unsalted) butter in...

* Let it cool down to room temperature ( or it is likely not to hold as much air) and beat it till fluffy...

Hope it helped... Had a quick look on your site. You decorate cakes better than most ( including me  )

If you make , we want pictures... good luck!
