so im going to make up my own muesli soon and wondering if anyone has done this before? any tips?

im thinking of using the following:

bran

slivered almonds

rolled oats

pumpkin seeds

sunflower seeds

diced apricot

dates

prunes

sultannas

then mix with yoghurt and some mixed frozen berries for breakie :)

then ill have 4-5 whole scrambled eggs too after the muesli

should i toast the nuts,oats and seeds too?

will be very tasty id imagine

Put the rolled oats, bran, coconut, sunflower seeds, pumpkin seeds and sesame seeds in a shallow ovenproof baking pan and bake at 160°C for 10 minutes.

Add the chopped nuts and stir to mix well. Bake another 10 minutes, or longer if you like a more toasted mix.

Cool, stir in the raisins or sultanas and the chopped dry fruit mix. Store in an airtight container. Serve with chopped fresh seasonal fruit for breakfast.

Have tried this way and it is sooooooo good... enjoy =)

My favourite Bircher Muesli.

2 cups Rolled Oats

1 1/4 cups Apple Juice

1 cup Yogurt

2 med Green Apples

1/4 cup Roasted Slivered Almonds

1/4 cup Dried Currants

1/4 cup Shredded Coconut

1 tsp Cinnamon

1/2 cup Yogurt (extra)

Combine oats, juice and yogurt. Cover and refrigerate.

Peel, core and grate one apple and stir in oat mixture with nuts, currants, coconut and cinnamon.

Core and thinly slice remaining apple. Serve with Apple and Yogurt.

Serves 6

Nutritional Count: 36.1 carb, 9.2g fat, 8.1g protein, 268cal
