Light coconut milk

SO I love thai curries (well any sort of curry really, being a Pom) and lashing of coconut milk/cream is obviously OFF the menu, but what about the Light version - 255kj per 100mls?? I've also been told evaporated milk with coconut essence is good but there seems to be more cals in that? And I'll be eating it with HEAPS or veggies and if rice only a little and brown!!

Why is it off the menu? Coconut fats are fantastic, nothing to avoid. It's the calories you're worried about I assume, so if you prefer the taste of using coconut milk/cream just compensate for the extra calories by having it with less rice.

I thought that Coconut milk, oil, cream were full of trans fats??

Only if it's been hydrogenated which they do to some of the oils to increase the melting point. I think the milks and creams should be fine, no reason to hydrogenate them.

So just as a totally off topic comment (sorry!), I work with this English dude who told me in the snootiest voice possible "Pom is a word coined by the Australian. it's racist". Is that just his opinion? Just curious coz you used it to describe yourself :D

So just as a totally off topic comment (sorry!), I work with this English dude who told me in the snootiest voice possible "Pom is a word coined by the Australian. it's racist". Is that just his opinion? Just curious coz you used it to describe yourself :D

Ha funny thats actually what a lot of people think but its totally not the case. 'Pom' is derived form an acronym used in ye olden days to describe - "Prisoners Of Her Majesty In Exile" or 'pomie'...hence 'pom' so historically speaking.......its actually the Aussies who are the Poms!!!!
