Bacon and Courgette Quiche

Ingredients

6 eggs

2 grated Courgettes

Just just under ½ cup milk

½ cup self raising flour

½ cup grated cheese

1 teaspoon Oil

1 Table Spoon Sweet chilli Sauce

3 rashes of bacon / smoked chicken

½ Onion

Salt and Pepper

1Hand Whisk eggs, flour, milk, sweet chilli sauce, and oil in a bowl until no lumps.

2. Brown ½ an onion and 3 rashes of bacon in pan.

3. Add grated courgettes, grated cheese, browned onion and bacon, and salt and pepper to the wet mixture (eggs, flour........)

4. Grease a baking dish (the dish I use is 20cm by 20cm and about 6cm deep) with butter and lightly flour. This creates a small crust and stops the quiche from sticking. The size of the dish will affect the height of your quiche – note the quiche only rises slightly.

5. Pour in mixture.

6. Place in fan bake oven at 180 degrees for approx 40min or until golden brown on top.

7. Cool for 5 or so minutes and eat.

Note: for variation you can chuck in some cherry tomatoes or put a few dollops of cream cheese / pine nuts on top.
