Chopped onion

Packet of paste + water/jar of sauce + water, or make your own sauce from scratch (Google it)

Stick in crock pot at night ready for morning, or put on during day ready for evening. People say you need to saute the ingredients first, but I never have and think it comes out nicer for it. Sometimes searing the meat first makes it tough, even after hours of cooking.

Lentil dhal is another easy one - lentils, spices (or curry powder), water. Add chunks of chicken, beef, veges and spices of choice, quinoa or rice, whatever, water. Mix and cover. Heat on high for 4 hours, or on low/auto for 7 – 8 hours.

Slow cookers are great for a good madras too.

If you buy beans in bulk (kidney beans, chick peas etc), you can soak them overnight and slow cook them during the day.

My advices are to heat the slow cooker before putting stuff in it - turn it on high for ten mins. I also find results are best when adding boiling water, not cold.

Basically just chuck stuff in it and add water :pfft:

I loooove my slow cooker. It has been a godsend the last couple of weeks where it has been so hot in the house to turn on the oven. Also great because I tend to get tired at night and end up skipping dinner/missing dinner cos I fall asleep, but with the slow cooker it's already done! \:D/

Here's a favourite recipe, not exactly low fat but oh so tasty!

Creamy Pesto Chicken

500g chicken tenders or breast

1 can cream of chicken or mushroom

1 cup prepared pesto

1 can of artichoke hearts drained and quartered

1/2 cup sundried tomatoes cut into small bits

1/2 cup milk

salt

pepper

garlic powder

a handful of pine nuts

Add to crock pot and cook on high for 3 hours. Serve over pasta and along side a vegetable.
