At the mo i just put some tinfoil down ->

Put lemon pepper and squeese lemon juice on it->

put 2 medium size fish on ->

more lemon pepper and lemon->

wrap up and throw on pan for a few minutes each side.

Usually cook 4 at once.

Tastes soo good and is so easy. Sometimes add tartare sauce but it dont need it.

Makes a big difference if you get fresh fish from the local chippy. I stopped buying supermarket fish years ago as it was always gagging material after cooking. I just spray a good non stick pan and cook both sides. A little low sodium sweet chilli sauce is good on top and a mountain of stir fry vege. Even after eating the same way for 2 months I still looked forward to my dinner. If your pushed for time, it takes 5 minutes from heating the pan to cooking and then I get those individual serve frozen veges out of the freezer, quick zap in the microwave and your good to go.

When I catch a salmon I'll often eat it raw :P

if it's a big bastard or if I get a few ill get it cold smoked and vacuum packed then it freezes well and is ready to eat.

Sea fish I usually dip in a flour/egg/salt/pepper batter then drop it into a hot pan in a bit of olive oil for about 2 mins each side. Too easy

I'm with becbec.

I get 10kg of frozen hoki for 80 dollars from moore wilsons and just take a piece out the freezer and microwave for 4 minutes..... Perfect!

It's actually fresher than "fresh" fish because they blast freeze it as soon as the boat gets in or on the boat. Unless you go to the docks/seafront to get your fish...
