Two easy cookie recipes

I just read these recipes in a new article on T-Nation here.

I haven't tried them yet myself, but intend to have a go this afternoon.

They look similar to sludge, but with oats and/or coconut.

I like the look of Chris's "Gourmet" Cookies, personally...

Dr. Lowery's "Utility" Lab Rabbit Cookies

Ingredients (makes 4 cookies)

1 Cup Oatmeal [raw]


4 heaping Tbsp. Peanut Butter


2 Scoops (60g) Protein Powder (chocolate
 recommended)

1/4 Cup Water or Milk to allow for mixing

Directions:

Simply mix protein powder with uncooked oatmeal and natural peanut butter (or any nut butter really, like walnut or almond). Mush them all together into "cookies." Eat 'em, train your balls off, get big.

The provided nutrient breakdown per cookie (which will vary slightly depending on whether you use the Biotest brand protein powder, skim milk, full-fat milk or water):

kcal: 212 
Protein: 13g 
Carbs: 18g (3g fiber)
 Fat: 11g


Chris's "Gourmet" Lab Rabbit Cookies

Ingredients

1.5 Cups Oatmeal [toasted or raw]


3/4 Cup Natural Peanut Butter or Almond Butter


2-3 Scoops (60-90g) Protein Powder (chocolate
 recommended)

1 Cup Unsweetened Coconut Flakes


Just enough water to allow easy mixing

Directions:

Toss the oatmeal into a bowl. Toss the protein powder and coconut on top of it. Add peanut butter and just a little warm water and mash it all together with your grubby paws. Form into cookies (or even just balls) then roll them in a plate of extra coconut flakes if you'd like.

Well, I just made my first batch of the "gourmet" cookies.

I didn't have any chocolate flavoured protein (I prefer natural, unflavoured for my shakes), so I added 2 tsp of cocoa and 3 tsp of sugar to the mix along with my protein.

It's a bit messy to make. I used my hands as I'm not sure that it would mix very well with a spoon, and that gives the added bonus of licking fingers afterwards. :D

The mix (using 1.5 cups of oats and 90g protein powder) made 12 golf-ball/squash ball sized balls and they look pretty good when coated in coconut!

They taste pretty good too, although next time I think I'll probably double the amount of cocoa and sugar I used, as the chocolate flavour isn't very strong and they're not very sweet either. Not sure how they'd turn out if you use a chocolate flavoured protein powder, but you should be able to adjust the flavour with other additions if needed.

But, overall, I think they'll make a great little snack! :nod:

Hmm... I've never tried almond butter, where do you buy it?

I love peanut butter, so anything that competes with it must be good! :nod:

http://www.chantal.co.nz/ Organic peanut butter, Almond butter, you name it, they make it. you can get it from Pak 'n Save supermarkets (nationwide as far as I know)

Hey I tell you though, I make my own. Almonds are cheap at the moment (apparently our strong $) and at least in Napier they are only $13 a kg from Chantal Organics. Roast them in the oven with a tiny bit of olive oil at about 160 C, and shake them every few minutes so they cook evenly. Keep an eye on them; you'll have to sacrifice the odd one to see if they are cooked all the way through, but don't worry too much if they aren't as it's better to under do them than over. Nuts continue to cook so get them out and into a food processor, and blend them up for ages. I mean ages! You can add a little more oil later on, but don't be tempted to add it too early because as the almonds (or peanuts etc) become butter, the oil is released.

If the Almond butter is too white, the almonds didn't have enough cooking time. No problem, transfer the almond butter into a clean good quality non stick pan and cook it on the stove top on a moderate heat, stirring constantly add a little salt if you wish. Again, take the pan off early and if necessary, put into a water bath (water and ice in the sink) to cool down the pan. This will in turn thicken the butter as it cools. Transfer to a jar when cool enough and enjoy!
