Almond Nests with Lemon Topping

3 egg whites

1/4 tsp vanilla

1/2 tsp liquid artificial sweetner

2 tbsp cornflour

140g ground almonds

70g slivered almonds

Preheat over to 180 degrees. Place a layer of baking paper on a baking tray. Place the egg whites in a bowl, add salt and beat until soft peaks form. Beat in the vanilla, artificial sweetner and cornflour. Fold in the ground almonds. Spoon the mixture onto the baking tray to make 10 meringue nests. Place in oven and cook for about 25 mins until crisp.

Topping

3 egg yolks

1/4 cup lemon juise

1/2 tsp liquid artificial sweetner

2 tbsp lite ricotta cheese

Place eggs yolks, lemon juice and liquid artificial sweetner in a microwave bowl, stir well. Microwave 2 minutes until ticking, stir well and cool. Add ricotta and mix well.

Divide the topping amongst the nests

Each one contains:

5g protein

4g carbs

9g fat

1.2 g sat fat

om nom nom - i've just been eating the base mixture instead of having handfuls of almonds
