"Grips - Upright Rows can be done with both narrow grips and wider ones. The narrow grip focuses on Trapezius and wider focuses on entire shoulder girdle. Also the wider grip allows some cheating movement thereby allowing you to lift more weight."

Yes Rose that pretty much sums it up but I think also you can target traps or delts specifically by how you hold the bar & how high you raise the bar. Also slightly different "feel" can be obtained by using cables. So the grip is not so much an overhand "grip" but more a lose wrist hanging thing especially at the top of the movement where the bar should be under the chin & the bar held & traps or delts squeezed. When you think about it, this exercise is quite a compound and complex lift. Everyone has their own variation that works for them. Maybe some of the expert bio-mechanical gurus could give their opinion as how to effect it for best advantage.
