Roast Vege Salad

Hey guys, not too sure how healthy this is but would be ok as a small side to your grilled chicken breast = )

This will serve 2 people-

1 cup scrubbed spuds chopped into chunks

1 cup crown pumpkin

1 cup orange or gold Kumara

2 red onions chopped into chunks (i leave the skin on but you can take it off)

CHuck it all in a tray and drizzle on some olive or rice bran oil (you can do it without the oil) and roast until veges are cooked. Just before the veges turn brown, scatter the chopped onion over top and roast until onion is tender.

When it is ready, put it all in a bowl and put some small chunks of feta cheese (if you want this) or a big dollop of cottage cheese. CHop a lemon in half and squeeze over top of salad and mix through a couple of cups of rocket and/or baby spinich. Very yum.
