Fruit and Bran Muffins???

Okay, made these ones on the weekend, tasted pretty good, little bland (I used unflavoured protein powder - could try with vanilla or banana)

Also, thinking about removing banana and adding dried fruit (sultanas or similar).

Baked pretty well so could try play around with quantities a little to reduce sugar/ increase protein.

Ingredients:

2 cups oat bran

2 medium size mashed bananas

1 medium egg

1 1/4 cups protein powder

1 cup all purpose flour

2/3 cup splenda (granular)

2 Tbsp vegetable oil

1 1/2 tsp baking powder

1/2 tsp baking soda

1 tsp cinnamon

1 1/4 cup skim milk

Prep:

1. Mix splenda, oat bran and milk in large bowl - set aside

2. Mix flour, protein powder, baking podwer, baking soda and cinnamon in medium bowl - set aside

3. Mix egg, banana and vegetable oil in small bowl,

4. Add 3 to 1, mix well.

5. Add 2 to 4, mix well.

5. Spoon mixture into 12 well greased muffin tins.

Bake @ 200 C for 9 mins, turn baked for further 6. Guess even split would be better.

Sugar 6 g

Fat 3 g

Saturated Fat 0.5 g
