Ultimate Low Carb Protein Pancakes by Laurasaur

Ingredients:

500g lite Cottage Cheese (whole big tub)

125g cream cheese (half normal size tub)

60g of whey isolate protein(Reactiv or whatever you use) (2 american scoops)

1 egg

water (about 1.3 cup)

1/3c bran flakes - optional (i use healtharies - store in fridge or freezer or they will go off)

2 tbsp white flour

1 tsp baking soda

optional extras - splash of vanilla, cinnamon, whatever spices/flavours you want.

Chuck all wet ingredients in food processor together. Obviously don't put the whole egg shell and all in... Blend for about 30 seconds until all mixed in and completely smooth.

Add isolate, 1/3 cup of bran flakes, baking powder, and flour and blend until smooth.

Pour into pan in small pancake sized batches and cook until bubbles appear on the top side then flip and cook until done.

I havent added the nutritional info for the flour/bran yet but it is minimal.

Cals = 1,077

Fat = 47g

Cholest = 347mg

Sodium = 883mg

Carbs = 23g

Sugars = 5g

Fiber = ?g (bran)

Protein = 129g

These taste "dry", best served spread with a little bit of cream cheese and a teeny bit of jam. Or peanut butter.

Yum!! I just made some with gluten free flour as it was the only stuff I had and used Low Fat yoghurt instead of cream cheese as I didn't have any cream cheese. They turned out great Thanks Laura!

Good stuff, gluten free success!! Yaya, they look nice and puffy, must be the yogurt :)

My recipe...

Sweet pancake

6 egg whites

1 scoop/serve vanilla protien powder

1/2 teaspoon ginger

1/2 teaspoon cinnamon

Blend/whisk all together... dont worry about any lumps.

Cook in a non-stick fry pan lightly sprayed with oil. Once browned, flip.

Serve with a smear of peanut butter and a handful of defrosted mixed berries.

Makes 1 large (think pizza base) size, or a few smaller ones.

Perfect for those times when you need something filling but cant be assed being in the kitchen for long.

I tried these and they were a total flop!!

Don't know what I did to them.......its a bit like cook book pics though...always look better when someone else makes them.... :roll:
