Cooking Chicken Breasts

Sorry for reviving a 14-month old thread, but I was reading through and saw that people had problems with chicken drying out when cooking and remembered back to an article I read ages ago about soaking it in salt water.

The method is to dissolve a half-cup of salt and a half-cup of brown sugar in a gallon of water (why can't them Americans keep up with the rest of the world and use metric measurements already?!), then immerse the chicken in the solution and refrigerate immediately. Let it soak for 3 to 12 hours and before cooking rinse and dry the chicken with paper towels. It also makes the chicken cook faster (saving time!)
