Low or zero fat Curried Eggs

Pumpkin is my new best friend. I absolutely adore stuffed curried eggs...lots of them - but for obvious reasons the fat had to go. So I replace the egg yolk with mashed pumpkin, adding some finely diced sauteed onion, curry powder, pinch of salt and a table spoon of flaxseed oil (optional) to the whole mix, fill the halved eggs and enjoy.

It looks like a lot of food too! 6 boiled egg whites, halved and filled with the curried pumpkin mix = 12 things on your plate \:D/ ...then go and add your greens and you may just need 2 plates.
