Hi Ladies,

I tend to prefer a cold lunch than a hot one (especially at work) what are your ideas of a good lunch ... today I had kumara and chicken (yes cold!) it was quite tasty.... what are some other ideas as I always get to the supermarket and seem to run out of ideas for lunches!! Thanks.

Cold potato and tuna or green beans and tuna, sounds yuk but I like it haha

heh.. for the past couple of weeks every lunch I made was tuna and green beans. It worked well as I had to take lunch with me for a whole week when normally I eat at home.

Current fav - Tuna Lite with 50 grams of cashews and balsamic vinegar. Side of capacium (yellow, orange and red) salad

ummmm that sounds good! Im going to give that a try I love balsamic vinegar! Need to remember to buy more nuts when I shop next.

Other cold lunches I usually do tuna; chickpeas make a nice addition to most lunches.

Sushi Salad

1 tin of tuna

50 gms brown rice

3 sheets of nori (seaweed) shreaded

1-2 Tsp of pickled ginger

Mix up together, the seaweed has near no calories and the ginger minimal also! Dosen't look that nice but sushi fans will like it! You could also ad some sweet chilli sauce or soya sauce for taste.

Works out approx:

198 - 200 Cal / 34 Pro / 11 Carb / 1 Fat (give or take for the nori and ginger component).

Options: You can add chopped peppers, cucumber etc to make the meal bigger. Also you could swap out the tuna for fresh fish, chop chop chicken, reg cooked chicken, salmon.

Ladies: How do you prepare the green beans? I struggle to get the stuff down if it's just cooked in water with some salt. I mainly eat mine when it's part of my mixed veggies. Here in SA we also prepare it mashed with patato and onions flavoured with salt and white pepper. That tastes good to me but the patato is a bit to calorie dense when trying to loose weight. Any good ideas to help me out :pray:

You might not like this idea, but sometimes, I'll eat my green beans raw and dip them in Marmite or fish paste or chilli sauce.

Something else I do is to stir Fry Fresh Green beans in non-stick pan (light spray of cooking oil) with fresh garlic and sometimes pesto.

Don't knock it till you've tried it.

I steam the beans.. I like lots of different beans :) Green though is nice steamed and lightly tossed with some garlic as said above just in a pan without oil and a little water. Asparagus (fresh) goes very nice with a teriyaki dressing and walnuts maybe that could work :) would be worth a try anywa.. mix a tablespoon of teriyaki with a little garlic and honey heat slighly and toss in the walnuts and pour over the beans :)

Lately I have tried tuna with white cannellini beans. Some chopped tomato and onion mixed together which is pretty nice!

Cook'em, I don't cook my beans really, I just pop frozen ones in my container the night before and nuke it for 1-1/12 mins at lunchtime then sling my tuna in and mix. Easy and I like the taste so don't make a fuss about my food. Green or Broad are my beans of choice. Better than brocolli, ewww sick of that shit! Still eat it but only 1-2 times per week.

This sounds awesome to say the least, I'm definitely going to try this at the first possible oppertunity. I eat tuna and cashews almost daily but have never combined it, looking fwd to it.(with the added balsamic vinegar of course)

Queen you sound like a real gourmet cook. The steamed beans with garlic looks simple to make and garlic is so yummy \:D/ If I want to treat myself I will maybe try the latter suggestion. Thanks!

Biggurl: I cook most my veggies in the microwave. Put it in container, cover it with water and nuke it for a couple of minutes. Unfortunately the green beans prepared that way is a bit bland for me. Maybe I should just toughen up a bit and get more hardcore like you :grin:

So many good suggestions, don't know when I am going to get the chance to try them all out =P~

My lunch is usually at work (reheated) so I prepare it the night before.

Grilled chicken in a container, add frozen beans. (Im happiest keeping it simple).

Nuke 3 mins, add cajun spice and flax seed oil.

A couple of times a week its steak (I'll cook the night before but its really only 'browned'). Add beans, or brocolli, kumara. Nuke 3 mins, adding tuscan seasoning (rosemary & garlic) + flax oil. This one usually brings all the nosy parkers our wanting to have a look at what smells so good.
