Always always when I lived in rome the lady downstairs was teaching us abotu pasta she would say never to leave the pan it was almost a sin to leave the pan once the pasta was added.. must be cooked perfectly. That said its been around 43 months since I had pasta...

but always l;ots of boiling water no small pans, rock salt and olive oil
