Tuna, Surimi and Three Bean Salad

Just something to liven up your tuna:

Small tin of Tuna

Small tub of surimi chopped

Red Onion chopped

x1 Stick of celery chopped

Small tin three bean mix

Cup of Pasta Shells Cooked

Cook the pasta and drain. Rinse well and drain the three bean mix.

Chop the celery and red onion and then combine all the above ingredients in a large bowl with 2-3 tps of lite mayonnaise. Mix well and put in the fridge.

Serve on a bed of lettuce with chopped cucumber and tomatoes.

You can add a tsp of lite tomato sauce and some mustard to make it have a more sea food taste.

Takes me about 10-15 minutes to cook the pasta and the rest of the ingredients are just chopped and thrown in a bowl or rinsed and drained and thrown in. I make a large batch of the stuff and it does me a few lunches. Just double the ingredients. Red onions are good as they are chocca with quercetin and good for inflamed tissue--so good to have a lot of those when your repairing muscle.

You can also use no salt tinned salmon instead of tuna.
