Stir Fry Sauce?

Hey Guys, What sauces do you all use when making a stir fry? Currently i am using the Wok Creation sachets (Watties i think?) and wouldn't mind using something healthier and made from scratch too.

Any ideas much appreciated :)

These are all variations on the same theme, but you could try:

Soy sauce

Sweet chilli sauce

-----------------------------

Soy sauce

1-2 tsp crushed garlic

1/2 tsp finely chopped chilli

1-2 tsp brown sugar

-----------------------------

Soy sauce

1-2 tsp crushed garlic

1-2 tsp finely chopped ginger

1-2 tsp brown sugar

You could try adding a bit of coriander if you wanted, but personally I think it smells like squashed ants.

Whenever I've had a roast chicken, I keep the carcass & boil it up with celery, some lite salt, carrots, onions & garlic to make chicken stock.

I freeze this & use it when needed.

It's good to mix with evaporated milk & a couple of drops of coconut essence (this makes low fat coconut milk) for a good Thai style stirfry.

I usually go to the Oriental stores here and stock myself with all their goodies. I like cooking from scratch so I seldom buy ready made stuff. A "must" have for me for stir fries are oyster sauce, plum sauce, fish paste, fish sauce, prawn paste, chilli sauce (Vietnamese), etc. I like to use ginger, onion and garlic in my stir fry too. Sometimes I use a little garam masala and turmeric to give it an Indian flavour.
