There's an old post here somewhere that explained it.  The short answer is vitamins do that.  From food or otherwise.

 

Dissolvability in water doesn't matter for any purpose I can think of.  So long as you can get the multivit to your stomach, the rest takes care of itself.

 

Fat soluble vitamins probably benefit from being taken with a meal or at least fats.  Some olive oil in a shake works.  Or maybe they'll just bind with serum triglycerides and it all works out anyway.  That can be your homework assignment :P
