low-carb lemon dessert

mix up the following in a microwave safe bowl:

1 egg

1 tbsp splenda

40g ground almonds

50g ricotta

zest of half a lemon, juice of half a lemon

nuke for about 2 and a half minutes. splash of liquid cream over top for extra lowcarb awesomeness 8)

recipe comes out to be roughly 5 grams carbs, not including fibre 8)

Bastardised this last night :lol:

Tried it with orange instead of lemon. No ricotta so used spreadable cream cheese (kinda the same thing, right?). And forgot to buy almonds, so used a tablespoon of Nutella. Came out pretty wet even before adding the cream, so threw in a serve of choc whey.

Turned out like a kinda mushed-up hot jaffa mousse. Willdoagain :nod:
