Pancakes

OK here’s a simple protein pancake recipe, it uses Edmonds Pancake & Pikelet mix as the base…..1 cup of Pancake mix, 1 egg, 1 ¼ cup milk, 2 scoops of protein powder (your choice of flavour), ¼ cup oats… place ingredients into bowl and mix with whisk then start cooking.

This will make approximately 15 pancakes (4-6grams protein per pancake) serve with banana & maple syrup or mixed berries & yogurt

Go on eat all 15 I dare you to  …. If you have 4 of these it’s about 20grams of protein which isn’t to bad (for us smaller guys) I wouldn’t have this every day it’s more of a breakfast to have every now and again

That sounds like a nice pancake recipe, Andrew - I must give that a try sometime.

I have my own pancake recipe, which I tend to have most mornings. This uses egg whites as the main protein source, but can easily be enhanced with a scoop or two of protein powder:

8 egg whites and 2 yolks

6-8 tablespoons of rolled oats

a handful of natural muesli

one crushed Weetbix

one sliced banana

Mix and cook on high in a frypan with some spray oil. Cook until the top of the pancake is solid enough to flip it without wearing it, then finish cooking the other side. It helps to leave the mix for 30 minutes or so to let the oats absorb some of the moisture - it just makes it easier to flip that way.
