Homemade Toasted Muesli

This stuff is grouse!!!

It takes a bit of fluffing around but is better than anything on the shelves at the foodmarket.

I just spent this morning making a batch - it's addictive.

You'll need:

6 cups whole oats

half cup lite canola oil

half cup honey

1 heaped tspoon cinnamin

1 heaped tspoon mixed spice

half cup walnuts

half cup sunflower seeds

half cup pumpkin seeds

half cup almonds

half cup brazil nuts

1 cup dried apricot pieces (chopped up)

1 cup raisons or sultanas

1 cup dried mango pieces (chopped up)

Put the oil, honey, mixed spice & cinnamin in a large pot and melt on the stove top - place the oats in and mix.

Put the sunflower & pumpkin seeds into a pan and heat - the seeds will start to pop.........keep stirring around so they don't burn & take off the heat when browned.

Mix the rest of the nuts with the oats and place in an oven dish.

Cover this mixture with the sunflower & pumpkin seeds & put in the oven for about 15-20mins on a heat suitable for baking.

Pull it out & mix it around - put it back in for another 5-10mins (keep an eye on it). You'll have to do this 4-5 times to make sure that most of the muesli gets toasted.

Take it out for the final time & mix the apricots, sultanas & mango bits up in it. Let it cool down & store it.
