Banana Bread

Well, it's actually called "Leigh Ann's Banana Bread" but I can't remember which Recipe forum I copied it from...

But this ere's the original version, and its pretty easy to adapt and change:

2/3 c oats (raw)

1 sc banana pp (She used American Whey)

1 egg white

Cinnamon to taste

Splenda to taste

Preheat oven to 180C.

Combine all ingredients and add enough water to make a thick batter. Then put in a well greased mini loaf pan. Cook until the middle has set (approx. 20 minutes.) Let cool/serve.

Per serving (makes 2)

Cals 202

Fat: 3g

Sodium: 121 mg

Carbs: 29g

Fiber 5 g

Sugar: 0.5g

Protein: 14 g

I made a few changes to it by adding in about 1/2 mashed banana (whats a banana cake with no bananas?!!) and 1/2 tsp baking soda to lighten the texture a bit.

You can always change things up by switching ingredents - vanilla or chocolate PP instead of banana, or adding chopped apples or applesauce for apple/cinnamon bread etc. It's a pretty versatile recipe :)
