When your "boneless skinless chicken breast" has slivers of breast bone and cartilage and gristle still attached to it. No recipe in the history of cooking has ever called for chicken breast with bone fragments still attached. No cook will ever be pleased to see bits of cartilage in the middle of their meat. "Thank God, they've included the gristle..." said no-one, ever. So why do they do it? It's just shoddy butchery, and there's NO excuse for it! Had $200 worth of New World vouchers last year, emailed them, asked them to do it in bulk chicken breast. They put me through to the head of the butchery department. He did it for $7.40/kg SKIN ON boneless breast. Easy to rip the skins off. F'all weight in the skin. cheaper than pak save by far.
