Andrew Posted November 8, 2006 Report Share Posted November 8, 2006 1 Celery stalk, chopped½ chopped Red onion2 chopped garlic cloves½ red capsicum chopped2 sprigs of fresh parsley chopped3tbsp wholemeal breadcrumbs85g tomato paste680gm ground chicken breast1 egg1 packet ready mix onion soup¾ cup chicken broth285gm potatoes cut into wedges85gms baby carrots ½ tsp black pepper½ tsp saltPreheat oven to 220 degrees. Combine all the ingredients except the chicken broth, potatoes & carrot into a large mixing bowl. Mix thoroughly the more you mix the better you can shape the meatloaf, shape into a oval form then place into a large baking pan the meatloaf should not fall apart. Surround it with the potato wedges and baby carrots. Add the chicken broth, pouring it over the meatloaf and vegetables. Andrew Posted November 13, 2006 Author Report Share Posted November 13, 2006 This is a variation I came up with in the weekend for the chicken meatloaf1 Celery stalk, chopped ½ chopped Red onion 2 chopped garlic cloves 3 pieces sun dried tomato chopped2 sprigs of fresh parsley chopped 3tbsp wholemeal breadcrumbs 85g tomato paste 680gm ground chicken breast 1 egg 1 packet ready mix onion soup ½ tsp black pepper ½ tsp saltWhole red capsicum Preheat oven to 200 degrees. Combine all the ingredients except the capsicum into a large mixing bowl. Mix thoroughly the more you mix the better you can shape it, cut the top off the capsicum and scoop out the seeds and as much of the white flesh as possible. Fill the capsicum with the chicken mix then place onto a large baking pan. Place it in the oven and after 30-40 min it will be ready Quote Link to comment Share on other sites More sharing options...
